On Saturday, after running 14 miles with Nicole in the morning, attending Getting Gorgeous in the afternoon, I was ready to go to my friend Rebecca’s to have dinner! Another friend Malin also came and we all contributed one dish. To start out I made Cowboy Caviar a recipe that my mom frequently makes for get togethers.
Such an easy recipe:
Main Ingredients: Black Eyed Peas, Corn, Diced Tomatoes and Avocado, Leeks, Cilantro
Dressing: 1/4 cup EVOO, 1/4 cup balsamic vinegar, 2 cloves crushed garlic, 1 teaspoon cumin, salt and pepper.
I served the healthy appetizer with not so healthy tortilla chips but it made for a fun way to start the evening! Perfect snack to eat just as a side dish or salad as well!
For our main course, Rebecca prepared a bed of arugula that was tossed in a light balsamic dressing. Smashed (not completely mashed) potatoes on the side with perfectly oven-grilled chicken. She neatly placed two rolled up pieces of prosciutto on top with basil leaves as garnish. Finally, the sauce was a combination of vegetable stock and creme fraîche-salty, buttery, amazing. It was poured over the top of everything and brought the entire dish together. Fabulous, fabulous, fabulous!
For dessert, Malin brought the ingredients to make Gino, very typical in Sweden. I had never had it before so I was intrigued. You layer the bottom of a glass pan with sliced bananas, strawberries, and kiwis. Grate white chocolate over the top and bake in the oven until you see some action happening! The chocolate should be a little golden. Serve it with ice cream and it is absolutely delectable!
Yum! Loved this evening, despite being jokingly reminded that the Finns were once owned by the Swedes! We’ll leave that dispute for another day!
